New food safety evaluation tool for cured ham

We are leading the development and application of a new food safety evaluation tool for the production process of cured ham.

The SAFETY.TOOL operational group is composed of the consortium of companies: RAMON VENTULÀ, as the leader, CORPORACIÓN ALIMENTARIA GUISSONA and BOADAS 1880, as beneficiary members, INNOVACC, as a non-beneficiary member, and IRTA, as the technological center and coordinator.

The main objective of the project is the development of a new tool based on predictive microbiology and computerized tomography for the evaluation of food safety in the production process of cured ham without nitrifying agents and reduced in salt.
